I participated in Tough Mudder in PA in April, 2012. One of the greatest experiences in my life and if my injury permits, I'll be doing it again in June 2013.

HW: around 200 lbs

CW: 166 (new scale reads higher)

Goal: in shape, healthy, happy, abs.

Gluten free for the most part due to questionable sensitivity. I've been failing at this lately.

I had a lower back injury in April 2012 which caused me to gain some of the around 50 pounds I lost back. It turned out to be a herniated disc.

How to cook a spaghetti squash


A few people asked me how to cook it so this is how I do it!

What you’re going to need:

  1. A spaghetti squash. I feel like this one is obvious. 
  2. A GOOD knife.
  3. Some plastic wrap.
  4. A fork and spoon.
  5. A microwave.
  6. Something to put it all in.. a container of some sort.

What you’re gonna do:

Take the spaghetti squash

Cut it in half!

It may take a while. They are really hard to cut. 

It should look like this!

Now you’re going to take a spoon and dig out the seeds like you would do with a pumpkin. This is the biggest pain in the ass. Some people like to bake the seeds but I don’t like them so I just threw them away. Sorry.

Now it should look like this!

Now you’re going to take some plastic wrap and cover the squash. Like so.

Now pop it in the microwave [one at a time] for 6-7 minutes each depending on how big it is. I did 6 minutes for these. After they are done, take them out, remove the plastic wrap and let them cool for a while. They’re SUPER hot. Please use oven mits to take them out of the microwave. You can thank me later.

After they’re cooled, or cool enough to handle, get your bowl and fork. You’re going to scrape the squash out of the.. squash and into the bowl. It should look a little something like this

That’s all! Super easy!  

Now you have a crap load of spaghetti squash to enjoy! If you’re like me it will last you 2-3 days max. As for the actual eating of it, I never put sauce on the whole thing because I like mine different each time. Sometimes I make mac n cheese with it, sometimes with soy sauce and veggies, sometimes with light butter and grated cheese! 

It’s about 42 calories per cup for plain spaghetti squash. Enjoy!

Recipe! [my first!] I don’t know what to call it.

I have no idea what to call this. Granola fruit chocolate thing. Honestly, it’s big enough to eat as lunch or breakfast. 

  • About 400 calories
  • Serves 1

What You Need:

  • Granola. I used Trader Joe’s Vanilla Pecan Granola [or something]. It’s about 200 calories for a 1/2 cup.
  • 2-3 Strawberries
  • 1 small-medium banana
  • 2 dove dark chocolate squares [or any dark chocolate you may have]

What do I do with all of this crap?

  1. First measure out your granola. I used a half cup. Cut your banana into slices. Same with the strawberries. Cut your dark chocolate. You want shavings or tiny chunks. I slice mine thinly then cut that in half.
  2. Sprinkle a little bit of granola into the bottom of a bowl. Just enough to cover the bottom. Throw a sprinkling of dark chocolate on top of that. 
  3. take half of your banana slices and plop them on top in layer format. Follow with another layer of granola and dark chocolate. This time a bit more.
  4. Add a layer of your strawberries. Use them all. 
  5. Another layer of granola and dark chocolate.
  6. Add the rest of your banana slices and then SPRINKLE that with the rest of the granola and the last of your dark chocolate.
  7. VOILA! You got this fruity granola chocolate thing. ENJOY!

It’s super delicious and you can tell that since I made it, anyone can make it! Just cut shit and layer it. There is a pretty decent amount here. It filled a whole cereal bowl when I made it. It keeps you full for a really long time too! I eat it as a snack but like I said, it will satisfy you for a meal too. Your calories are going to change depending on how much of each ingredient you use, the type of granola, fruit substitutions, etc.
